“The Fat Summit – Separating Fat from Fiction” I’m super excited about this summit! For years I had an unhealthy relationship with fat. Growing up we always had whole milk and butter, but somewhere along into my teen years my thinking became something like this: “why put butter on my food? I’ll just pass and eat those 100 calories in the form of a banana or something.” I mean, we are constantly bombarded with the message that “fat is bad, fat is our greatest enemy” and I actually bought into it, until I lost my health. After over a year of exhausting health issues and much research, I began to have a more open mind. Since I needed help, I decided to give this a try. I had to start slowly because my body (liver and gallbladder specifically) wasn’t used to eating very much fat, but pretty soon, I began to take those vital steps of change. Steps like taking fermented cod liver oil, putting a big scoop of coconut oil on my oatmeal, indulging in avocados, golden pastured butter and lots of farm eggs! I’ve even become so bold as to start using pastured lard and tallow in my cooking!
Through changing my diet, I regained my health, my skin became glowing, my acne disappeared, my hormones are balanced, my digestion is better, immune system strong and I’m a nice, healthy body weight. On top of this, my body has given birth to and nourished two beautiful, healthy children in the course of about 22 months. Are you curious yet? Now just to clarify, in case you don’t tune into the summit (which I hope you do), that we’re not talking about fats like canola oil, soybean oil, margarine, corn oil, sunflower and safflower oil. All of theses are highly processed, highly inflammatory, endocrine disrupters, unusable in your body’s natural hormone process, cause heart disease and a multitude of other health problems. Also, they are rancid before ever hitting the shelves due to the high heat process it takes to extract these oils. Lastly, these were not even a thing until the industrial revolution because you can’t extract the oils from the grains without machinery. These are the fats you want to avoid like the plague.
But I digress. The purpose of this post isn’t so much to educate (otherwise it would have to be about twenty pages long), but I just want to encourage people to sign up for this summit and learn for yourself. Also, I’m not saying to go insanely overboard on fat, but not to fear it as an enemy. Don’t shun it, but embrace it as a helpful, healthful friend. Indulge without fear in this much-needed food group and your body will thank you. See if you notice a difference after adding good fats into your diet for a month and removing the bad. It will affect your energy, your metabolism, your fertility, your skin, and most importantly your brain! And while you’re at it, pass the butter, baby! I’m super stoked about this summit!
